Green tomatoes often refered to as “green when ripe” (GWR) means exactly that. They are still green when ripe. Not to be confused with green tomatoes that are picked underipe for frying. Green Giant and Absinthe are two of our favorites. If you close your eyes and eat them you would think you are eating a sweet, juicy red or pink tomato so don’t let the color fool you. We think they are especially beautiful when added to a tomato salad or platter. If you haven’t ever grown green tomatoes don’t miss out on it, so worth it. The only tricky part is you have to feel them to know when they are ripe. When they just start to feel slightly soft and give a little bit it’s time to pick.
